"We find when we take the brain out that it is all wrinkly, so we stretch it out into a sheet about ten feet square and iron it before we use it. Once it is ironed it looks like this (stretches out a pink sheet). And now you can use it as a table cloth, or cut it into small filets and heat it in a light bearnaise sauce, like these. Aren't they just lovely? Fried brains for a late morning breakfast. It's a good thing."
